In Costa Rica they use the following for Sugared figs.
Remove stem and dip fig in boiling water for 30 seconds remove and roll or cover with granulated sugar. Allow to dry for 10 12 hours in a good dry spot or briefly in a dehydrator. Dry just enough that they are not juicy. Put in plastic bag and put on shelf. May be eaten like candy any time or used to make fig recipes like "figgy puddin" any time.
