Blueberry Cheese Muffins
- 1-1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 cup yellow cornmeal
- 2 cups blueberries
- 1 egg, well beaten
- ¼ cup sugar
- 1 teaspoon salt
- 2 cups shredded sharp cheddar cheese
- 1 cup milk
- ¼ cup melted butter or margarine B
Combine flour, sugar, baking powder, salt, cornmeal,
cheese and blueberries. Beat remaining
ingredients and add all at once to dry ingredients. Stir only to blend. Spoon
into greased muffin pans. Bake in
preheated hot oven (400°F) for 20-25 minutes.
Yield: 18 muffins.
