Blueberry Bucket Dumplings


  • 1 pint (2 cups) flour
  • 2 eggs
  • 1 quart (4 cups) sweetened blueberries
  • 1 large tbs. Butter
  • 2 level tsp baking powder
  • 1 large tbs. Shortening
  • 2/3 cup milk

Mix butter, shortening, flour and baking powder. Add eggs, slightly beaten, then milk, and mix.  Put in a shortening can or mold and smear around sides.  Place one quart of berries in center.  Cover mold and steam in boiling water for three (3) hours.  Serve with hard sauce.  This dumpling is more delicious than when made with biscuit dough.  Add sugar to berries for desired sweetness.  Other fruits in season may be substituted.
