Blackberry Salad Recipe

Provided by the South Carolina Department of Agriculture


  • 2 (3 ounce) packages of black- raspberry flavored gelatin
  • 2 c boiling water
  • 1 c cold water
  • 1 c fresh blackberries
  • 1 c chopped pecans
  • 1 envelope whipped topping mix
  • 1 (8 ounce) package cream cheese, softened
  • 1 c sugar

Dissolve gelatin in boiling water; stir in cold water.

Chill until consistency of an unbeaten egg white.

Fold in berries and nuts.

Pour into a 9-inch square dish; chill until set.

Prepare whipped topping mix according to package direction; add cream cheese and sugar, blending until smooth.

Spread over gelatin layer.

Chill several hours.

Yield: 9 servings.
