Blueberry Buckle

Ingredients:

  • cup shortening
  • 2 cups sifted enriched flour
  • cup milk
  • cup sifted enriched flour
  • cup sugar
  • 2 tsp baking powder
  • 2 cups fresh blueberries
  • tsp cinnamon
  • 1 well-beaten egg
  • tsp salt (opt.)
  • cup sugar
  • cup butter or margarine

Thoroughly cream shortening and cup sugar; add egg and mix well. Sift 2 cups flour, baking powder, and salt. Add to creamed mixture alternately with milk. Pour into well-greased 11 x 7 x 1 inch pan. Sprinkle blueberries over batter.

Combine cup sugar, cup flour, cinnamon, and butter till crumbly; sprinkle over blue berries. Bake in moderate oven (350 degrees) 45 to 50 minutes. Cut in squares. Serve warm.
