Blueberry Chantilly

Ingredients:

  • 3 cups fresh blueberries
  • 4 tbs. confectioners’ sugar, divided
  • 1 teaspoon vanilla
  • 1 tsp. grated orange or lemon peel
  • 1 cup heavy cream
  • Pound cake slices or macaroons

In medium bowl, combine blueberries, orange or lemon peel and 1 tablespoon sugar.  In small mixing bowl, beat the cream, remaining 3 tablespoons sugar and vanilla until stiff.  Fold into fruit.  To serve;  spoon over pound cake slices or macaroons.  Yield:  4 to 6 servings.
