Blueberry Chantilly


  • 3 cups fresh blueberries
  • 4 tbs. confectionersí sugar, divided
  • 1 teaspoon vanilla
  • 1 tsp. grated orange or lemon peel
  • 1 cup heavy cream
  • Pound cake slices or macaroons

In medium bowl, combine blueberries, orange or lemon peel and 1 tablespoon sugar.In small mixing bowl, beat the cream, remaining 3 tablespoons sugar and vanilla until stiff.Fold into fruit.To serve;spoon over pound cake slices or macaroons.Yield:4 to 6 servings.
