Blueberry Tea Bread


  • 2 cups unsifted all-purpose flour
  • 3 teaspoons baking powder
  • 1 ½ cups fresh blueberries
  • 2 eggs
  • 3 tablespoons salad oil
  • confectioners’ sugar
  • 1 cup sugar
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 teaspoon grated fresh orange peel

In large bowl mix flour, sugar, baking powder and salt.  Stir in blueberries.  In small bowl beat together eggs, milk, oil and orange peel; add all at once to flour mixture.  Stir until dry ingredients are moistened.  Turn into greased 9x5x3-inch loaf pan.  Bake in 350 °F. oven 1 hour or until cake tester inserted in center comes out clean.  Remove and cool 10 minutes, remove from pan and cool completely.  Sprinkle top with confectioners’ sugar before cutting to serve.  Makes 1 loaf.
