Blackberry Chantilly Recipe


  • 1 cup of crushed fresh blackberries
  • ½ cup of sugar
  • 1 cup of whipping cream
  • 2 tablespoons of blackberry schnapps
  • ½ teaspoon of vanilla extract
  • 1 10.5 ounce angel food cake

Stir together blackberries and 1/3 cup of sugar; let mixture stand stirring occasionally. Beat whipping cream at medium speed with an electric mixer until foamy; gradually add remaining sugar, schnapps if desired, and vanilla beating till soft peaks form. Fold into berry mixture. Serve over angel food cake.

Yield: about 8 servings taking about 20 minutes to prepare.
